Sure, you can still partake in the staples - chips, burgers and dogs - but why not augment your tailgating experience with a few unique, tasty dishes from The Midnight Gourmet?

Nick Tolbert, a.k.a. The Midnight Gourmet, is back this season to provide his weekly recipes for Bengals fans. Check back prior to each Bengals game throughout the season for the latest dish.

THIS WEEK'S TASTY RECIPE (NOVEMBER 15, 2009)
GRILL “JUNGLE” CHICKEN WITH HONEY AND MUSTARD GLAZE


Ingredients
¼ cup margarine or butter melted
2 tbsp lemon juice
2 tbsp beer
½ tsp Worcestershire sauce
¼ tsp salt
1/8 tsp pepper
¼ garlic
½ tsp fresh Rosemary
3 to 3 ½ lb whole broiler fryer chicken, cut into quarters

HONEY MUSTARD SAUCE
3 tbsp honey
2 tbsp butter, melted
2 tbsp “toasted” almonds
2 tsp lemon juice
1 tsp mustard
* Mix all ingredients

Prepare medium-hot grill. Brush grill rack with vegetable oil. Prepare honey mustard sauce. Mix remaining ingredients except chicken in small 1-quart saucepan. Cook over low heat 5 minutes, stirring occasionally. Mop or brush margarine mixture over chicken. Cove and grill chicken, skin side up, 5 to 6 inches from medium heat 25 to 35 minutes, turn. Mop with margarine mixture. Cover and grill 35 to 45 minutes longer, turning and mopping two or three times with margarine mixture, until juice of chicken is no longer pink when centers of chicken pieces are cut. Serve chicken with honey mustard sauce.

In recent years, Nick has been dedicated to teaching others the art of classical cooking. He has been a featured writer for several magazines and newspapers. In 1998, he launched "Denova" - a company that created a popular local cable television program called The Midnight Gourmet.
